Why does chocolate type come first?

Couverture chocolate contains cocoa butter and normally needs controlled pre-crystallisation when the final product requires gloss, clean snap, contraction from moulds and stable handling. Tempering manages that crystal structure through a controlled temperature process.

When should you choose a wheel machine?
